The blending / mixing of the green coffees is like a composition, which requires a lot of feeling and, in turn, Expertise required to find the ideal balance of acidity, sweetness and bitterness for each blend.

Roasting - traditional and experienced

Roasting is done in the classic traditional drum roasting process.
Gently, cautiously, at low temperatures, constantly, slowly and evenly, and cooled with fresh air.
This gives the beans enormous aroma and flavor while ensuring optimal digestibility.
