Dark Muscovado is a natural, unrefined cane sugar produced in Mauritius according to time-honored recipes. This soft, dark-brown, moist sugar, with tiny traces of syrup and a slightly sticky texture, encompasses a wide range of flavors—from caramel to subtle licorice. Dark Muscovado enhances the aroma of any espresso and refines marinades, savory sauces, chutneys, chocolates, and pralines. Due to its natural state, moist sugar can dry out. If the sugar has become too hard, simply place a damp cloth over it overnight, and it will soften again.
